I know, I know, I go on about Oddbox but loooooook! I opened my Tuesday box and it had rhubarb in it! I had literally just taken my salmon en croute for dinner (recipe coming soon) out of the oven and spotted it and knew what to do. A quick wash, chop, sprinkle with sugar and top off with crumble mix and voila! A beautiful dessert we all ate, with double cream, after our dinner. We’ve got more lovely fruit to eat but that rhubarb just made the evening for me!
